Has anyone an explanation for the difference between the GPS-time (from iPhone)and my in-camera (z8)-time? GPS-time is UTC and the local time in Germany is UTC+2

TBH, no idea what you are talking about or/and what you mean/your problem is. š¤
GPS time = GPS time
My iPhone always shows UTC+2, and so do my cameras, when all settings (region and DST) are correct.
Maybe a screenshot helps to understand what you mean.

This is by design.
By definition, the Exif-field for the GPS time is not meant to contain any timezone offsets. However, it's a separate field from the normal date/time fields of when you took the photo, these still get set by the camera clock.
If you take a picture with Geotagging enabled, then use the up/down arrow to look at the metadata information overlay with the GPS data, you'll see it's even labelled as UTC-Time!
The setting "Set time from satelliteā uses the GPS time to set the camera clock. again, Nikon expects the GPS time to be without the timezone for this feature to work, and you need to set the timezone in the dedicated field in the camera. The camera clock is set only when you turn on the camera. To avoid possible errors here, I'd
- wait for the Unleashed to get GPS data from the app,
- turn the "Set time from satellite" setting on,
- then turn off and on the camera to make sure the clock gets set,
- double check if it worked,
- then disable that setting again, to avoid accidentally changing the camera clock.
